The Paesh 23

Introducing The Paesh 23. The official apéritif of the first Paesh culinary event of 2023. I purposely chose to highlight the use of summer, fresh red plums to compliment the stone fruit notes in the Opaline Pinot Noir Brut Rosé-Sparkling Wine. I prefer to reserve my Rosé Champagne for enjoyment in its pure essence. I always have endless cocktail options for sparkling wine. An apéritif is what you make it!

What is an apéritif?

Apéritif is an alcoholic drink served before dinner to stimulate your senses and appetite. The aperitif may consist of wines, cocktails, or spirits but not exclusive to France. The variety of options stretches across many countries, regions, and cultures. Plums are used in French pastries, such as clafoutis- a baked custard dessert with fruit. Inspired by the light, sweetest of clafoutis, the tartness of red plums and mimosas, the Paesh 23 was born.

Ingredients

  • Opaline Pinot Noir Brut Rosé-Sparkling Wine (can be substituted with sparkling wine)

  • 1 Pound Red Plums, Sliced

  • ⅓ Cup Granulated Sugar

  • 2 Fresh Lemons, Juiced

  • ⅓ Cup Water

  • Thinly Sliced Red Plum Garnish

Let’s Create.

  1. Add red plums, sugar, water, and lemon juice to a food processor. Blend until smooth and strain.

    Tip: After ripening, keep your plums refrigerated until blending.

  2. Add red plum purée to the coupe glass and top with chilled sparkling wine. Tchin Tchin!
