Chicken & Gruyère Tartine w/ Shallot Jam
Classic French Onion Soup serves as the inspiration for the Chicken & Gruyère Tartine with Shallot Jam. This crowd-pleaser is perfect for small plates or a larger portion size for dinner. This tartine uses 2 of my recipe staples: pan-seared thyme chicken breast and shallot jam. The best part is that you can make the components in advance, and the final tartine assembly takes less than 5 minutes.
What is a tartine?
At its essence, a tartine is simply an open-faced sandwich with limitless flavor, texture, and ingredients. The foundation of a great tartine begins with great bread. Verzênay’s baguettes are excellent! It has a beautiful, crusty exterior with the perfect amount of chewiness-hello, gluten development. Honestly, this is the closest match to the flavor, texture, and aroma compared to the baguettes I’ve enjoyed throughout France. For your next appetizer or meal, try a tartine.

Chicken & Gruyère Tartine
Ingredients
Baguette, Sliced
Pan Seared Thyme Chicken Breast
Shallot Jam
8oz Chicken Broth
8oz Gruyere Cheese
Salted Butter
Let’s Create.
Thinly slice pan-seared thyme chicken breast. Add chicken and chicken broth to a baking dish. Keep warm.
Turn oven on low broil.
Spread a thin layer of salted butter onto baguette slices. Toast until golden brown.
Add thin slices of chicken breast.
Top with shallot jam.
Add a layer of gruyère cheese.
Broil until light golden brown. Enjoy!
Pan-Seared Thyme Chicken Breast
Ingredients
2-3 Chicken Breasts (1 pound)
⅓ cup Grapeseed Oil (can substitute with olive oil)
2 Tablespoons Dried Thyme
1.5 Tablespoons Kosher Salt
1 Tablespoon Black Pepper
1 Tablespoon Onion Powder
1 Tablespoon Garlic Powder
1 Fresh Lemon, Juiced
2 Tablespoons Salted Butter
Olive Oil
Let’s Cook.
Marinade chicken breast with grapeseed oil, spices, and lemon juice in a container for 8-12 hours.
Remove chicken breasts from marinade paste.
Pan-seared chicken breast in olive oil until done.
Add salted butter to finish. Enjoy!
Shallot Jam
Ingredients
1 lb Shallots
2 Teaspoons Sugar
2 Teaspoon Soy Sauce
Grapeseed Oil (Can Substitute with Olive Oil)
Let’s Cook.
Add thinly sliced shallot to the pan with a small amount of grapeseed oil. Slowly sauté until fully caramelized. ~20-30 minutes
Stir in sugar and soy sauce. Cook an additional 1-2 minutes. Enjoy!
